Frozen kefir is the tangy cousin of frozen yogurt: cold, creamy and bright with the sourness of milk kefir. This version needs no eggs and no ice-cream machine. Whipped cream gives it body and air, honey and vanilla round out the tang, and regular stirring in the freezer does the rest.

What the whipped cream and honey do
Kefir frozen on its own sets into an icy block. Many kefir ice creams start with a cooked egg custard, because egg proteins help keep ice crystals from forming; the egg-free route is to whip the cream until it holds plenty of air. Overbeating clumps the fat and pushes that air back out, and too much cream can make the ice cream taste buttery. Honey matters as much as the fat. Too little sugar leaves ice cream rock hard, and runny honey dissolves into a cold mixture where granulated sugar can stay gritty.
Make the mixture sweeter than seems right
Cold dulls sweetness, and kefir's acidity masks it further, so the unfrozen mixture should taste a little sweeter than you want the finished scoop to be. If your kefir is especially sour, add a little more honey. Too much sweetener brings the opposite problem, because the mixture may never freeze properly. Keep the kefir cold and never heat it, since heat curdles its proteins and dulls its fermented flavour, and a thoroughly cold mixture also freezes creamier.
Roasted peaches, berries and a summer float
Roasted peaches go beautifully with this honey-vanilla ice cream. Roasted strawberries, other berries and stone fruit such as peaches and plums are good companions, and chocolate chips add a little crunch. In hot weather, drop a scoop into a glass of water kefir for a float.
Egg-free frozen kefir
Ingredients
- 300 ml plain milk kefir Use cold, unsweetened kefir.
- 180 ml whipping cream Use cold, unsweetened cream with 35% fat.
- 60 ml honey Choose runny honey so it mixes in easily.
- 1 tsp vanilla extract
You will need
- Mixing bowls
- Electric hand mixer
- Spatula
- Shallow freezer-safe container with a lid
- Household freezer
Instructions
- Stir the kefir, honey and vanilla together in a bowl until evenly mixed.
- Whip the cold cream in a separate bowl until the peaks hold but curl over at the tip. Stop while the cream is smooth, before it turns grainy.
- Use a spatula to gently fold the kefir mixture into the whipped cream, lifting from the bottom until evenly combined.
- Pour into the shallow freezer-safe container, cover and freeze.
- Every 30 minutes, scrape the frozen mixture from the edges into the centre and stir thoroughly. Cover and return to the freezer each time, repeating until thick like soft-serve ice cream.
- Continue freezing with the lid on until firm enough to scoop, allowing about 4 hours in total. If the centre is still too soft, freeze for longer.
- If too hard to scoop, soften in the refrigerator for 30–40 minutes before serving.
- Scoop into small bowls and serve.
