Kefir whey

The pale yellow liquid that drips out when kefir becomes cheese

Leave kefir for a while and a pale yellow liquid sometimes separates in the bottle: that is whey. When we make kefir cheese, we strain it out and bottle it on its own.

  1. 1

Kefir goes into a cloth-lined strainer

It drains slowly, drop by drop, into the bowl below.

  2. 2

    Curds stay, whey drips

The curds in the cloth become cheese; the pale yellow liquid below is the whey.

  3. 3

    Bottled and shipped chilled

Each portion is 500 g and keeps 28 days in the fridge.

Why is it called “liquid gold”?

Whey is mostly water. Its sourness is the lactic acid made while kefir ferments, and it still carries live bacteria and yeast. The acid makes pancakes fluffier and meat more tender; the cultures ferment vegetables and drinks. In Western kitchens, this leftover from cheesemaking never goes to waste.

Eight ways to use it

The acid tenderizes meat and lifts pancakes; the cultures ferment vegetables

  • 1

    With sparkling water

Whey is clearly sour. Add the same amount of sparkling water, a spoon of honey and ice, or mix it with juice, for a light, tangy drink.

  • 2

    Homemade fizzy drink

Mix 1 part whey with 9 parts juice or sweetened fruit purée and water. Leave it at room temperature for one to two days until the yeast makes fine bubbles, then refrigerate. In sealed bottles, let the gas out once a day.

  • 3

    Fermented vegetables

Add 2 tablespoons of whey to a 1-litre jar with cucumbers or carrots in brine, and the ferment starts sooner. Too much gives a yeasty smell. It also starts ginger beer and kvass.

  • 4

    Marinate meat

Lactic acid tenderizes meat. In a study, pork soaked in whey for 10 to 15 hours became clearly more tender, while 5 hours made no difference, so marinate overnight. Add salt, garlic and herbs; chicken comes out juicier too.

  • 5

    Pancakes and baking

Use whey wherever a recipe calls for buttermilk. Its acid reacts with baking soda and makes bubbles, so pancakes rise fluffier; if the batter is thin, add a spoon of flour.

  • 6

    Skin care

Put it in a spray bottle and mist it on your body or face to moisturize. Skin types vary: test a little on an inconspicuous spot first and watch for redness or itching. With a serious skin condition, ask a dermatologist first.

  • 7

    Water your plants

Mix 3 parts whey with 7 parts water and pour it at the roots, not on the leaves, about every two weeks. Whey is acidic, so it suits acid-loving plants such as azaleas and blueberries; skip it if your soil is already acidic.

  • 8

    Stains and cleaning

Soak clothes in whey and water before washing. Spray it on counters and sinks, wipe with a cloth, then wipe again with plain water.

FAQ

What customers ask us most

What does whey taste like?

Sour, with a little of kefir’s fermented aroma; the sourness is lactic acid. If it is too sharp on its own, add sparkling water and honey, or mix it with juice.

How long does it keep?

Keep it refrigerated: it lasts 28 days in the fridge.

How much do I add to fermented vegetables?

About 2 tablespoons per 1-litre jar. Too much gives a yeasty smell. Leave it out of sauerkraut: whey makes cabbage soft.

Anything to watch with homemade fizzy drinks?

The yeast makes gas, so pressure builds in a sealed bottle. Let the gas out once a day while it ferments, refrigerate it once it fizzes, and open it slowly.

Can I pour it straight on my plants?

Dilute it first, about 3 parts whey to 7 parts water, and pour it at the roots. Whey makes soil more acidic, so skip it if your soil already is.

What should I do before putting it on my skin?

Skin types vary. Try a little on an inconspicuous spot first and watch for redness or itching. With a serious skin condition, ask a dermatologist first.

Can I order it with kefir?

Yes. Put them in one order and they ship chilled together.
