Armenian kefir gata pastries

Gata is Armenia's butter pastry for feast days and ordinary afternoons, and these small rolls are its homeliest form: soft golden dough wrapped around a sweet paste of butter, sugar and flour. Plain milk kefir moistens the dough, so it rolls out easily and bakes up tender. Put the kettle on, because in Armenia these are served with tea or milk.

Gata for weddings, journeys and lucky coins

Gata comes in many regional shapes, and its preparation is on Armenia's list of intangible cultural heritage. It was once baked in a clay oven called a tonir, and it still appears at weddings, baptisms, Candlemas and on New Year and Christmas tables. A round gata may hide a coin or a legume, and whoever finds it is considered lucky. South of Lake Sevan, cooks made a denser, unfilled triangle that kept well on long journeys.

The small rolled kind goes by more than one name. Nazook often means a walnut-filled roll made by Iranian Armenians. In Yerevan, rolled pieces like these are still called gata, and some families make them without nuts.

The buttery filling that never changes

Armenians call the filling khoriz, a mix of flour, butter and sugar that stays the same whatever the dough or shape. Here the butter is melted into a soft paste, while other cooks rub it into sandy crumbs. A thin, even layer matters, because too much filling keeps the dough from baking through and a too-dry filling stays hard. For variety, try cane sugar for a caramel note, chopped walnuts, or walnuts with cinnamon and raisins.

Why kefir and baking powder make a tender dough

Older gata relied on baking soda and a sour dairy such as yogurt to rise. This dough rises with baking powder, which carries its own acid, so it needs no extra soda. The kefir brings moisture and softness, and the dough grows more pliable the longer it rests. Extra flour is what makes gata dry and heavy, so dust the worktop only enough to stop sticking.
