Blend cooked beetroot with cucumber, lime and plain milk kefir, and you get a vivid magenta soup that is earthy-sweet and bright with tang. It borrows its name and its summer job from Spanish gazpacho, as a chilled starter for the hottest days. The kefir gives it a soft, velvety texture without any cream.

A gazpacho without tomatoes
Gazpacho is a cold soup of raw blended vegetables, traditionally linked to Andalusia and eaten all summer. Its familiar red form appeared in the 19th century, when tomatoes were added. Some Spanish beetroot versions keep the tomato, bread and vinegar and are served in a glass, or on a plate with fresh cheese, cherry tomatoes and pumpkin seeds. This bowl leaves out all three. Beetroot and kefir together also recall chłodnik, the pink cold soup of Poland and Lithuania.
Why cold soup needs a second tasting
Cold dulls our sense of salt, because the tongue's salt receptors respond best near mouth temperature. A soup that tastes well seasoned at room temperature can taste flat once chilled, so taste it again straight from the fridge and season generously. A few hours in the fridge also gives the flavours time to mellow. If the soup separates as it stands, a brisk stir or a shake in a jar brings it back together.
Beetroot, kefir and what goes on top
Most of beetroot's earthy taste sits in and just under the peel, so peeled beetroot tastes sweeter and milder. In Taiwan, vacuum-packed cooked beetroot can go straight into the blender, but some fresh-cut beet chunks are labelled not ready to eat and must be cooked and cooled first. Kefir brings its own sourness, made as fermentation turns milk sugar into lactic acid.
A plain bowl can feel one-note, so finish each serving with contrast. Try a fine dice of cucumber and tomato, croutons fried in olive oil, or a few beet sprouts with an extra swirl of kefir. Add anything crisp at the last moment so it stays crunchy.
