Blueberry lime kefir smoothie

Blueberries, lime and milk kefir make a breakfast smoothie that goes from blender to glass in five minutes and fills three glasses. Creamy kefir, juicy berries and a sharp tang of lime meet Medjool dates adding a deep caramel sweetness. Kefir is a little more tart than yogurt, so it gives the drink a lively sourness that the dates round out.

Sweet dates against sour lime

Milk kefir is fermented, and the lactic acid it builds up gives it a pleasant sourness and the body of a thin yogurt. Lime juice sharpens that tang, while the dates bring a caramel sweetness that keeps the sourness in check. Taste the smoothie before you pour it. If it is too tart, a little honey will sweeten it, and if it is too sweet, squeeze in one of the lime wedges.

In Taiwan, limes are usually sold as “seedless lemons”. They are mostly the Tahiti type, with a thinner peel, fine oil glands and pale yellow-green flesh without seeds, while the common lemon has a thicker, coarser peel and seeds. Both turn from green to yellow as they ripen, so colour alone will not tell you which one you are holding.

Thick, thin or slushy

Blueberries contain pectin and fibre, which thicken the smoothie as it blends. If it turns out too thick, loosen it with a small splash of water or kefir. A few ice cubes make it colder and give it a slushier feel. If you use frozen blueberries, boil them for 1 minute and let them cool first, unless the pack says they can be eaten without cooking. An ordinary blender may need an extra 30 seconds to a minute to make it completely smooth.

Other berries and what to serve alongside

Strawberries, raspberries or mixed berries can take the place of the blueberries. Some cooks add a pinch of cinnamon or ground cardamom, or a spoonful of flaxseed. For a fuller breakfast, serve it with toast or avocado toast.
