A smoothie bowl is a smoothie you eat with a spoon, cold and thick enough to carry a layer of fruit, seeds and crunchy coconut on top. This one is bright yellow with frozen mango, and milk kefir brings its rich, tangy flavour to the sweet fruit. It works as breakfast, an afternoon snack or a light dessert on a hot day.

From Brazilian açaí to Taiwanese summer kitchens
The idea goes back to the açaí bowl, a Brazilian snack of frozen mashed açaí fruit from the states of Pará and Amazonas. Around 2000, açaí pulp began to be exported to the United States, and the bowls took off first in Hawaii and Southern California, often topped with granola and banana. In Taiwan, smoothie bowls are a summer treat in many home kitchens, made with fruit frozen ahead in a sealed bag. Milk kefir, which began centuries ago near the Caucasus Mountains, gives the mango a tangy base in place of the usual yogurt or plant milk.
Frozen fruit, not ice, makes it thick
The texture of a smoothie bowl comes from the balance between frozen fruit and liquid. Frozen mango gives a thicker result than fresh, and more liquid always makes the bowl thinner. Ice cubes chill the blend but thin it as they melt, so for a spoonable bowl that holds its toppings, use more frozen mango and leave the ice out. Frozen banana is another good thickener, because it has little water, blends smooth and adds sweetness. When the blender stalls, switch it off and scrape down the sides before adding any more kefir.
Toppings with crunch and colour
Pair soft fruit with something crunchy. Banana slices, diced fresh mango, chia seeds and coconut flakes make a good set, and berries or kiwi slices add colour. For a tropical twist, blend frozen pineapple with the mango and finish with fresh pineapple and mint. Granola, oats or chopped nuts bring more crunch. Very ripe, fragrant fruit is often sweet enough on its own, so taste before adding the honey.
