Egg-free chocolate kefir mousse

Mousse is the French word for foam, and this chocolate mousse gets all of its air from whipped cream rather than eggs. Dark chocolate and cocoa give it a deep, bittersweet flavour, while milk kefir adds a gentle tang that keeps the richness light on the tongue. Soft, lightly caramelised pear and crunchy walnuts go on top, and both go beautifully with chocolate.

Egg-free chocolate kefir mousse

A French classic with a disputed past

Chocolate mousse is a French dessert served cold, and in its simplest traditional form it is nothing more than chocolate folded into whipped egg white. Nobody can say for certain who invented it. Printed recipes exist from 1768, 1814 and 1827, and even earlier the name described frothy chocolate drinks. The dessert reached New York at a food exposition in 1892 and became widely popular in the middle of the twentieth century.

How it sets without eggs or gelatin

Cold whipped cream holds its bubbles because its fat is firm, but on its own it slowly collapses. Chocolate solves that problem: as the mousse chills, the chocolate firms and locks the bubbles in place, so no gelatin is needed. Every stir knocks out some air, which is why the cream is folded in gently from the bottom of the bowl.

Temperature matters at every stage. Cold kefir can make melted chocolate seize into small lumps, so the kefir should be at room temperature. Hot chocolate, on the other hand, melts whipped cream, so the chocolate mixture needs to cool first. Cream whipped too stiff is hard to fold in and can leave the mousse grainy, so stop while it still looks smooth.

Pears that turn soft but not mushy

Choose ripe pears that give slightly when you press them. Overripe pears collapse into a purée in the pan, while underripe ones stay hard. Cooked briefly with lemon juice and brown sugar, the diced pears soften and the juice turns into a light caramel syrup. When the syrup starts to thicken, turn the heat down so it does not scorch. If you prefer to skip the pears, red berries or chocolate shavings make a simpler topping.
