Strawberries, milk kefir and a little honey freeze into ice pops that taste like creamy strawberry yogurt on a stick. Kefir brings a mild tartness, close to Greek yogurt, against the sweet berries, while whole-milk yogurt, cream and half a banana make each bite smooth rather than icy.

Why homemade ice pops turn icy
Ice pops turn hard and icy when large ice crystals grow in the mixture. Kefir is slightly thicker than milk but thinner than yogurt, and a base with too much thin liquid and too little thick, smooth dairy freezes icy. Full-fat yogurt and cream get in the way of those crystals, and sugar lowers the freezing point, so the honey matters for texture as much as for sweetness. Cut back on the honey and the pops come out firmer. Blending thoroughly and freezing quickly also helps keep the crystals small.
Cold dulls the sweetness we taste, so a frozen pop can seem bland. Taste the blended mixture before you pour it into the moulds.
Strawberries in season, and other ways to fill the moulds
In Taiwan's Dahu area, strawberry season is busiest from winter through spring. Pick berries that are evenly red and glossy, with fresh tops that have not dried out. Frozen strawberries work too: bring them to the boil for 1 minute and let them cool before blending, unless the pack says ready to eat. Other berries can replace them. For visible fruit, press thin strawberry slices against the inside of the mould before pouring, or pour fruit purée and yogurt separately for a marbled look. Small paper cups can stand in for moulds.
