Strawberry water kefir is plain water kefir, a lightly fermented sugar-water drink with no dairy, steeped with ripe strawberry slices until it turns rosy and fragrant. The berries soften the kefir's tartness and add their own sweetness. The kefir brings a clean tang and a light sparkle that make the strawberry taste brighter.

A Mexican drink that grew into a home favourite
No one knows for sure where water kefir grains began, but in Mexico they are known as tibicos. A report from 1899 describes grains taken from a prickly pear cactus and grown again in sugar water. Adding fruit to the finished drink is a modern home habit rather than an old festival tradition. Strawberries suit it well, because they tint the drink and give it a natural sweetness.
Where the flavour and the bubbles come from
The grains are strained out before the fruit goes in, yet some yeast stays in the liquid. It feeds on the sugar from the strawberries and releases carbon dioxide, and a sealed bottle keeps that gas in the drink. The fridge slows this work a great deal, so a chilled infusion is mainly a flavour step, with soft bubbles rather than soda-like fizz. Sliced berries release more flavour, which grows fuller over one to two days. Start with a base that is pleasantly tart, because a very sour kefir stays very sour even with fruit.
Taiwan strawberries, fresh or frozen
Most of Taiwan's strawberries come from Dahu in Miaoli, where picking starts in late November and runs to about March or April, and winter berries have the best flavour. Choose glossy, plump and fragrant fruit, because strawberries stop ripening once they are picked. Out of season, frozen berries work at the same weight. Freezing breaks the fruit's cells, so they give up aroma and sugar quickly, but they also release more liquid and dilute the flavour slightly.
Strawberry pairs well with mint. A squeeze of lemon turns the drink into a cold strawberry lemonade. A sliced stalk of lemongrass or a few unsprayed rose petals make two more fragrant versions.
