Watermelon blended with cold milk kefir and a splash of orange juice makes a pink, creamy cooler with no cooking at all. Anyone who has had watermelon milk in Taiwan will know the idea. Kefir gives the drink a creamy body and a gentle tang.

Why orange juice and kefir get along
Orange juice can turn fresh milk lumpy, because its acid makes the main milk protein, casein, clump together. Kefir has already been through that change: during fermentation its cultures turn milk sugar into lactic acid, so the milk is gently set and soured before it ever meets the juice. That is why kefir and orange juice blend into a smooth, creamy drink instead of splitting.
Serving it cold and changing the fruit
Chill the watermelon well before blending, and serve the cooler straight away. If it stands for a while, the pulp may settle, so stir or shake it before pouring. The simplest version uses only watermelon and kefir, and a frozen banana or a few frozen strawberries from a pack labelled ready to eat make it thicker and creamier.
Honey suits anyone who likes it sweeter, and a few mint leaves or a squeeze of lime also work well. For a frosty glass, freeze the blended drink in an ice-cube tray for 2–3 hours, then blend the cubes again until slushy.
