Pineapple coconut kefir colada

The piña colada is Puerto Rico's official drink, a cold blend of pineapple and coconut built for hot days. This smoothie keeps that pairing, swaps the rum and cream of coconut for plain milk kefir and shredded coconut, and gets its thick, frosty body from frozen fruit. Kefir, sour and lightly fizzy with the consistency of thin yogurt, gives the tropical sweetness a tangy edge.

A drink with several inventors

The name means strained pineapple, after the freshly pressed, strained juice at its heart. Several people claim to have invented it: a hotel bartender in San Juan says he created it in 1954, a colleague at the same hotel dates his version to 1953, and a nearby restaurant claims 1963. A folk tale even credits a pirate. What everyone agrees on is the pairing of sweet pineapple and rich coconut, and that pairing works just as well without the rum.

Frozen fruit does the work of ice

Frozen pineapple and banana give the smoothie its cold, creamy texture without watering it down with ice. Frozen banana also brings natural sweetness and a smooth finish. Peel and cut the fruit first, then freeze it in a sealed bag with the air pressed out, so a smoothie is always a few minutes away. With fresh fruit, add a handful of ice for a similar result.

Pineapple contains enzymes that cut proteins, which is why it is used to tenderise meat. In a milk drink that stands for a while, these enzymes can break down casein and make the drink bitter, so pour the smoothie as soon as it is blended.

Coconut, toppings and a bowl version

Unsweetened shredded coconut gives plain kefir its coconut flavour, and a splash of coconut milk makes it richer. Finish each glass with a slice of pineapple and a little toasted coconut, or a cherry in the classic cocktail style. For a thicker breakfast, pour it into a bowl and top it with pineapple, banana, oats, raspberries and coconut chips. It also makes a cool snack for a hot afternoon.
